Open-Faced Shredded Chicken Sandwiches

These hand held sandwiches are just the ticket for game day snacking. Smaller than a normal sandwich, but filling and flavorful, you’ll discover how simple open-faced sandwiches can be for parties and get-togethers.

  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • 1 teaspoon thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter, softened
  • 1 whole Smart Chicken
  • 1 French baguette, cut into 1/4-inch slices
  • 2 tablespoons butter, softened
  • 1 tablespoon seasoning salt
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon Italian seasoning

For the Chicken:

In a small bowl, combine the dried spices. Add softened butter and mix to form a paste.

Place whole Smart Chicken in the crock of a slow cooker. Spread seasoned butter mixture over the outside of the chicken and into the cavity. Cover the slow cooker and turn the temperature to high. Cook for 4 to 5 hours or until the chicken is falling off the bone.

Remove from slow cooker and allow chicken to cool until cool to the touch. Carve the meat from the bones. Using two forks, shred chicken.

For the Sandwiches:

Place oven rack in highest position and preheat oven to broil.

Spread each baguette slice with butter and place side by side on a cookie sheet. Broil for 1 to 2 minutes until lightly toasted (be careful not to burn).

Remove cookie sheet from oven. Top each baguette slice with 1/3 cup shredded chicken, 1 tablespoon shredded mozzarella cheese, a pinch of season salt, and a pinch of Italian seasoning.

Return to the oven and broil for 3 additional minutes, or until cheese is melted. Serve warm.
