Lemon-Based Marinade

Easy Recipe
  • 1/3 cup fresh-squeezed lemon juice
  • 1 teaspoon grated lemon zest
  • 1/2 cup olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh-ground pepper or red-pepper flakes

Whisk all ingredients together in a non-reactive bowl or shake together in a gallon-sized zipper bag. Add chicken pieces, stir or shake to coat, and marinate in the refrigerator for 30-40 minutes, turning once or twice.
