Honey-Garlic Chicken

Serves 4

  • 4 boneless skinless Smart Chicken breasts
  • Olive oil, as needed
  • ? cup chicken broth
  • 4 tablespoons lemon juice
  • 1 tablespoon honey
  • 3 to 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 to 5 sprigs rosemary
  • 1 lemon, sliced
  • Brown rice or seasonal greens, for serving

Preheat oven to 400°F. Spray a baking sheet with non-stick cooking spray and set aside. To a large skillet over medium-high heat, add olive oil and sear chicken on both sides until golden-brown. Transfer chicken to baking sheet.

In a small bowl, combine broth, lemon juice, honey, garlic, and Italian seasoning and mix well. Season with salt and pepper. Pour over chicken breasts and transfer to the oven for 20 to 30 minutes. About halfway through cooking, baste the chicken with the sauce from the pan by spooning it over each cut. Add the rosemary and lemon slices to the pan and return to the oven to finish cooking. Serve with brown rice, or over seasonal greens.
