Coffee-Rubbed Chicken

When one thinks of rubs for poultry, one generally thinks of barbecue spices, paprika, cayenne, and other such ingredients. Less common but equally tasty is this zesty coffee rub that combines the taste of your favorite caffeinated beverage with chili, mustard, and other spices to create a tangy chicken rub you’ll love.

  • Coffee Rub:
  • 1 1/2 tablespoons very finely ground coffee
  • 1 1/2 tablespoons brown sugar
  • 1 tablespoon kosher salt
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon black pepper

Preheat the oven to 400°F.

Mix the Coffee Rub spices together and set aside.

Rinse the chicken and pat dry. Rub the chicken all over with olive oil. Rub the chicken all over with the coffee mixture. Stuff the garlic cloves into the cavity of the chicken. Place the chicken in a heavy roasting pan. Pour the chicken stock into the pan. Roast the chicken for 20 minutes at 400°F. Reduce the heat to 350°F, and continue roasting for another 50 to 60 minutes, basting occasionally. The internal temperature of the chicken should reach 165°F. Transfer the chicken to a platter and let rest for 5 to 10 minutes before carving.
