Charred Corn & Sweet Onion Dip

Charred Corn & Sweet Onion Dip
  • 1 cup charred corn
  • 1 cup caramelized sweet onions
  • 2 garlic gloves
  • 1 tablespoon Dijon mustard
  • 2 tablespoon Worcestershire
  • ¼ cup olive oil
  • ¼ cup shredded parmesan cheese
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper

In the bowl if a food processor, combine corn, onions, garlic, and mustard and blend until nice and smooth. Add Worcestershire sauce and slowly add the olive oil. Add cheese and adjust seasoning with salt and pepper. Cover and refrigerate until needed. Serve as a dipping sauce for chicken skewers.
