1 (12 oz.) package Israeli couscous
3 (16.9 oz) cartons Smart Chicken Garlic Rosemary Bone Broth
1 pound Smart Chicken Boneless Skinless Chicken Breasts
6 cups kale leaves, washed and shredded
1 cups baby bell peppers, sliced
Cook Israeli couscous as directed on package and set aside. For additional flavor and protein, try cooking couscous with bone broth! Using a large saucepan or stockpot, bring 6 cups of Smart Chicken Garlic Rosemary Bone broth to a rapid simmer. Once broth is simmering, add chicken breast and poach until chicken has reached an internal temperature of 165 F. Once chicken is fully cooked, lower heat and remove chicken breast allowing to cool slightly. Shred chicken into small pieces and return to pot. Add kale, stir and let simmer for 5-10 minutes. Season to taste with kosher salt and pepper and garnish with bell peppers.
