Sweet & Spicy Glazed Chicken Thighs

- 4 to 6 Smart Chicken thighs
- ½ cup sliced red onion
- 1 tablespoon canola oil
- 1 teaspoon salt
- 5 Calabrian chilies, whole (or substitute your favorite chilies)
- 1 tablespoon crushed red chili flakes
- ½ cup honey
- ¼ cup sugar
- 2 tablespoons orange marmalade
To a saucepan over medium heat, add the oil and sauté the onions with salt for about 10 minutes. Add the chilies, chili flakes, honey, sugar, and marmalade and simmer for 20 minutes. Carefully transfer the sauce to a blender and blend until smooth.
Preheat oven to 400°F. Sear the chicken in a sauté pan until golden brown, add the sauce to the pan, and transfer to the oven. Finish cooking for 10 more minutes, basting the chicken with the glaze every 2 to 3 minutes. Cook the chicken until it registers 165°F on an instant-read thermometer.
