Grilled Chicken With Chipotle Sweet Potato Purée & Grilled Peaches

Serves 4

  • 2 large sweet potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1 (7-ounce) can chipotle peppers in adobo sauce
  • 2 boneless skinless Smart Chicken breasts
  • 4 peaches, halved and pitted
  • Canola oil, as needed
  • Kosher salt and freshly ground black pepper, to taste

Heat a grill to medium-high. Transfer the sweet potatoes to a large pot. Cover with water and season with kosher salt. Simmer until the potatoes are soft and tender, about 30 to 45 minutes. Strain the potatoes, reserving some of the cooking liquid. Transfer the cooked potatoes to a blender or food processor, then add the butter and three of the chipotle peppers (add more for a spicier dish). Blend on high until smooth and creamy, adding cooking liquid as needed to thin out the purée. Season the chicken and peaches with canola oil, salt, and pepper. Grill the peaches until caramelized. Grill the chicken breasts until the thickest portion registers an internal temperature of 165°F. Serve chicken with the potato purée with the peaches on the side.
