Greek Chicken Quinoa Bowls

Serves 4 to 6

  • 1 cup uncooked quinoa, rinsed in cold water
  • 1½ cups chicken broth
  • 1 pound boneless skinless chicken Smart Chicken tenders
  • 2 teaspoons Greek seasoning spice blend
  • Salt and pepper to taste

For Serving:

  • Kalamata olives
  • Diced cucumber
  • Feta cheese
  • Cherry tomatoes
  • Tzatziki Sauce

To the insert of a pressure cooker, add the rinsed quinoa, chicken broth, chicken, and Greek seasoning. Season with salt and pepper. Close the lid and cook on high pressure for 8 minutes. Use the quick release to release steam. Shred chicken and serve with olives, cucumber, feta, tomatoes, and Tzatziki Sauce (recipe follows).

    Easy Tzatziki Sauce

    • 1 cup Greek yogurt
    • 1 cucumber, peeled, seeded, grated, and drained of excess moisture
    • 1 tablespoon dill
    • ½ to 1 teaspoon kosher salt

    In a bowl or sealable container, combine sauce ingredients. Cover or seal and refrigerate until ready to use.
